Made this one last year in an attempt to clone the Southern tier Pumpkin Ale and came pretty darn close. I decided to tweak the recipe this time just alittle to lower the ABV and will boil the pumpkin instead of mashing it. I had some Amarillo Hops from OBK that I purchased back last October and didn’t even know I had any left in the freezer. I also added a 5min addition of Cascade and will be using WLP001 California Ale yeast. After the yeast has fought 10 gal in 2 separate carboys I will be washing and combining all of it for a Barley Wine which the pumpkin spice and so on should add cool flavour mmmm.
